For fillings 

  • 3 large eggs
  • 2 cups of pumpkin puree
  • 1 1/2 cups heavy cream, divided
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/2 teaspoon sea salt
  • 11/2 teaspoon ground cinnamon
  • 2 teaspoon pumpkin pie spices

For Cruster

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 tablespoon granulated sugar
  • 1/2 cup salted butter chilled and cut into 1-inch pieces
  • 1/4 cup ice-cold water

For garnishing

  • Whipping cream

Method ~ How To Make Pumpkin Pie Recipe From Scratch

Making the pie crust

  • Sieve the dry ingredients ( flour, salt, and sugar), and then add them to a food processor. NB; use the processor with an S-shaped blade for easy and smooth mixing.
  • Then add butter and water to the dry items and mix well until you form a coarse, thick dough that is sticky.
  • Then remove the dough from the processor and cut it into pieces, and roll two balls.
  • Cover with a cling paper and chill for around 30 minutes if you are using it immediately or overnight if you are not in a hurry.

Making fillings

  • In a bowl, beat your eggs, then add pumpkin puree, cream, vanilla and whisk well 
  • Add the remaining ingredients to the whisked pumpkin mixture (sugar, salt, cinnamon, and pumpkin pie spice); mix everything until the ingredients blend well

Cooking process

  • Preheat the oven at 430 degrees F
  • Get your dough from the fridge to settle for around 10 minutes
  • Grease the pie tin using butter and ensure all edges are well greased to prevent the dough from sticking
  • Then roll your dough to 1 inch thick, and it should be wider than the pie tin
  • Transfer one crust to the pie tin and spread it well at the base
  • Add your fillings to the lower crust and spread them well using a spatula
  • Then place the pastry top after the fillings
  • Trim the edges to remove the excess cruster hanging on the edges of the tin and to form a round-shaped pie
  • Place a pastry shied at the top and put the pie in the oven to cook
  • Bake at 430 degrees F for 15 to 20 minutes and then reduce the heat to 350 degrees F
  • Bake for another 50 minutes until completely cooked. Test with a toothpick to see if it is cooked
  • Remove the pie and transfer to a rack to cool
  • Put whipping cream in a paper piping and garnish the pie to your preference
  • Then serve
